I have had these wontons in my freezer for awhile now and wanted to use them in a different way. I made this soup for lunch the other day. It was fantastic. The pumpkin and curry flavors go amazingly with the wontons. This soup is a great one to have on a cold winter day. You can find the chicken cilantro mini wontons at Trader Joe's, or of course you can use another brand or even make your own.
Curried Chicken Wonton Soup
4 cups chicken stock, plus 3 extra tablespoons reserved for later
1/2 cup pumpkin puree
1 tsp hot curry powder
1 tsp sweet curry powder
1/4 cup chopped fresh cilantro
1 bag Trader Joe's Chicken Cilantro Mini Wontons
3 tablespoons cornstarch
Add all ingredients except wontons, 3 tablespoons chicken stock and corn starch to a medium sized sauce pan and bring to a simmer over medium high heat. Let simmer for 20 minutes. Add the Mini Wontons and let cook for 3-4 minutes. In a separate bowl add the reserved chicken stock, and the corn starch. Whisk well. Add to soup and mix thoroughly. Let soup simmer for 2-3 more minutes.
