Cookin' with Coolio

This week, we have a hot recipe from the our favorite Cooking Pimp Cookbook, – Cookin' with Coolio. The people over at Coolio's camp sent us a copy of his manual and asked us to try out some of the shiz he put together over the years and make blog post. So here it is. Coolio's Sweet Chocolate Potato Pie. As he puts it, he was Mother F***ing tired of Pumpkin pie, so he figured he could make something from one of his favorite dinner dishes – Sweet Potatoes. Why eat dinner if you can just eat Desert?

This pie was pretty F***ing delicious. Don't forget to shank it with your shiv to see if it's done around 45 minutes.



Coolio's Sweet Chocolate Potato Pie
from Cookin' with Coolio






What you need:

one l lb. Sweet potato
1 stick of unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
½ cup chocolate milk
2 eggs
1 dime bag ground nutmeg
1 dime bag ground cinnamon
1 teaspoon pure vanilla extract
one 9-inch pie crust, unbaked

Directions

Boil your sweet potato whole for 40-50 minutes or until done. Don't undress its sexy sweetness, so make sure to keep it in it's skin.

Preheat over to 350 degrees Fahrenheit.

Run cold water over the sweet potato, then slowly and seductively remove the skin.

Now, break apart the sweet potato into a bowl. Kneed it slowly, gently, like you're making love to this hot potato.

Add the butter and mix well with a hand mixer.

Stir in both sugars, the chocolate milk, eggs, nutmeg, cinnamon and vanilla extract. Beat on medium speed until the mixture is smooth.

Once you've beaten that mixture into submission, pour it into your unbaked pie crust.

Bake for 55 to 60 minutes.

Make sure you don't get to excited and serve your pie too soon. Let it chill out for 10 minutes, then serve it up.

    How funny is that... I didn't know Coolio was a chef, much less had a cookbook out. I know his music, it was a whils ago,
