Ben and I truly enjoy buffalo wings and we can been seen at our local wing place very frequently, but the thing is, we really enjoy the boneless wings, they are so much more easier to eat and they are not messy and you don't need to worry about getting wing sauce all over your fingers and even face. So when making this pizza I wanted to do something fun and do a boneless buffalo chicken pizza. It has all the ingredients that you will enjoy with wings; hot sauce, ranch dressing, celery, and of course blue cheese. Yum!!
Buffalo Chicken Pizza
adapted from The Way the Cookie Crumbles
1 lb boneless chicken tenders, cut into small pieces
1 cup Frank’s hot sauce, plus 1 teaspoon reserved
1 cup plain bread crumbs
1/2 cup all purpose flour
1 teaspoon apple cider vinegar
1 tablespoon buttermilk or plain yogurt
1 tablespoon mayonnaise
pinch of sugar
pinch of garlic powder
1 1/2 cup cheddar cheese, shredded
1/2 cup blue cheese, crumbled
¼ cup red onion, sliced
2 celery stalks, diced
12-16 ounces pizza dough
1/4 cup ranch dressing, optional for drizzling at the end
Preheat oven to 400 degrees F.
Season Chicken with salt and pepper. Set up a station to dredge chicken. Have a bowl with the flour, a bowl with the 1 cup of hot sauce and a bowl with the bread crumbs. Dredge chicken with flour then hot sauce then coat with the bread crumbs. When all the chicken is breaded heat some olive oil in a saute pan over medium high heat. Add the chicken and cook on both sides until browned. Once browned place on a clean plate with a paper towel to drain some of the oil.
For the sauce, In a small bowl, stir together the buttermilk or yogurt, mayonnaise, 1 teaspoon hot sauce, sugar, garlic powder, and a pinch each of salt and pepper.
To assemble the pizza, roll out your pizza dough and place on baking sheet. Spread the sauce evenly on the pizza dough; top with the chicken, then the cheeses, celery and finally the onions.
Bake for 15 minutes until cheese is melted and bubbly. Drizzle with ranch dressing if desired.
