Pumpkin Blondies

Here I go with another pumpkin recipe, can I just say it, I think I am obsessed with pumpkin. I saw this recipe on Annie's Eats and changed it a bit and halved the recipe. These turn out very good and more cake than cookie like. I still have half a can of pumpkin left, so be on the look out for more recipes, hopefully something savory next time.

Pumpkin Blondies
Adapted from Annie's Eats
Which was orginally from Martha Stewart

1 cups all-purpose flour
2 tsp. cinnamon
1/2 tsp. ginger
pinch of ground cloves
pinch of nutmeg
1/2 tsp. baking soda
1/8 tsp. salt
8 tbsp. unsalted butter, at room temperature
1/2 cup and a tablespoon granulated sugar
1/2 large egg
1 tsp. vanilla extract
1/2 cup pumpkin puree
1/2 cup dark chocolate chips
½ cup chopped, toasted pecans


Preheat the oven to 350° F. Line a baking dish with foil. In a medium bowl, combine the flour, spices, baking soda and salt. Stir together and set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar on medium-high speed until light and fluffy, about 2 minutes. Beat in the egg and vanilla until well combined. Mix in the pumpkin puree. With the mixer on low speed add the dry ingredients and mix just until incorporated. Fold in the dark chocolate chips and nuts with a rubber spatula.

Spread the batter evenly into the prepared pan. You can add extra chocolate chips and nuts to the top for garnish before baking if you would like. Bake until the edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out with just a few crumbs, about 35-40 minutes. Transfer the pan to a wire rack and let cool completely before cutting.

To serve, lift the cake from the pan using the foil and transfer to a cutting board. Peel off the foil and using a sharp knife, cut into squares or slices.
