Cinnamon Sugar Apple Donut Holes

I have been wanting to make something fun with Ben and I thought donuts would be perfect to make for breakfast today. It was soo easy to make these and it only took 20 minutes from start to finish. This is a great recipe to make for company and would be great served with a cup of hot apple cider or even ice cream.

Cinnamon Sugar Apple Donut Holes

1 cup sugar
1.25 tablespoons cinnamon
2 quarts vegetable oil
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
Pinch of ground nutmeg
Pinch of ground cloves
Pinch of ground ginger
2 large eggs
1/2 cup apple cider (I used Simply Apple juice, which tastes a lot like cider)
2 tablespoons unsalted butter, melted

Add 1/2 cup sugar and 1 tablespoon cinnamon to a small bowl and set aside for later. Transfer to a bowl. (If making by hand, toss the zest and sugar in a bowl using a fork until evenly blended.)

Heat the oil in a large Dutch oven until the temperature reaches 350 degrees. Whisk the flour, baking powder, and salt in a medium bowl. Whisk the eggs, remaining 1/2 cup sugar, and remaining cinnamon, ginger, cloves, and nutmeg. Whisk in the apple juice, then the butter, until well combined. Stir in the flour mixture until evenly moistened.

Use a cookie scoop to carefully drop heaping spoonfuls of batter into the hot oil. Fry, maintaining a temperature between 325 and 350 degrees, until the doughnuts are crisp and deeply browned on all sides, 3 to 6 minutes. Using a slotted spoon, transfer the doughnuts to a plate lined with paper towels and let drain for 5 minutes. Toss the doughnuts in the bowl with the cinnamon sugar until well coated and transfer to a serving plate. Repeat with the remaining batter, sugaring the doughnuts as directed and regulating the oil temperature as necessary. Serve. Makes 20-24 donuts,depending on size of cookie scoop.
