Turkey Meatloaf Muffins

These were amazing. Basically it it just meatloaf made into a muffin pan. I liked it because it is easy to portion out and it is just the right amount for a satisfying dinner.

I got the original recipe from Allrecipes, but adapated it to our liking and of course made it in the muffin tin.

(Dont mind our ugly plastic plates)

Turkey Meatloaf Muffins

* 1/2 cup ketchup
* 1/3 cup brown sugar
* 1/4 cup lemon juice, divided
* 1 pound ground turkey
* 1/3 cup Italian bread crumbs
* 1/4 cup chopped onion
* 1 egg, beaten
* 2 tablespoons Barbecue of America from Penzey's
* 2 garlic cloves minced


1. Preheat oven to 375 degrees F (175 degrees C).
2. In a small bowl, combine the ketchup, brown sugar, and 1 tablespoon lemon juice.
3. In a separate large bowl, combine the ground beef, bread, onion, garlic, egg, spices, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place muffin tins.
4. Bake at 375 degrees F (175 degrees C) for 25 minutes, drain any excess fat, coat with remaining ketchup mixture. At this point I took the muffins out of the tin and cooked them the rest of the way (about 5-10 minutes on a cookie sheet so they would not be cooking in the excess fat.
